Strawberry Basil Shrub Recipe
Yields about 1.5–2 cups | Shelf life: 2–3 months refrigerated
Ingredients:
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup fresh basil leaves, gently torn
- 1 cup sugar
- 1 cup apple cider vinegar
(or champagne vinegar for a brighter finish)
Instructions:
Step 1. In a bowl or jar, combine sliced strawberries and torn basil leaves with the sugar. Stir to coat well, then cover and let sit at room temperature for 12–24 hours, stirring occasionally. The sugar will draw out the juice and create a syrup.
Step 2. After the strawberries have released their juices and the sugar has mostly dissolved, add the vinegar. Stir well and cover again. Let sit for another 12–24 hours in the fridge to allow the flavors to meld.
Step 3. Strain the shrub through a fine mesh sieve or cheesecloth into a clean glass jar or bottle. Discard solids (or use them in a salad or yogurt!) and store the liquid in the refrigerator.
