Born enslaved in 1780, Cato worked at New York hotels, including an inn where George Washington was a frequent guest. After gaining his freedom, he opened Cato’s Tavern on a then-remote stretch of upper Manhattan. For the next 30 years, a fashionable clientele flocked uptown to enjoy cocktails that would become essential to the bartender’s craft.
